Ingredients
• ½ Tbsp olive oil
• 1 chicken breast (skinless)
• 2 Tbsps mayonnaise (egg-based)
• 1 tsp Dijon mustard
• Juice of 1 lemon or lime
• 2 celery stalks
• ½ cup bean sprouts
• ¼ cup chopped shallots
Method
- Place oil in a pan and cook chicken over medium heat until thoroughly cooked (6-7 minutes per
side). - In a small bowl combine mayonnaise, mustard and lemon/lime juice.
- Drain chicken and cut into strips and mix with dressing in the bowl.
- Add chopped celery, sprouts and shallots.
