- 750g lean beef mince
- 3 Tbsps (chopped) parsley
- 2 egg yolks
- 2 tsps mustard
- 4 tsps mayonnaise (egg-based)
- 100g blue cheese (finely crumbled)
- Salt and pepper to taste
- Blend together mince, parsley, egg yolks, salt and ground black pepper.
- Shape mixture into burger sized patties.
- Spray non-stick pan with oil. Cook burgers until browned and cooked through.
- Mix together mustard and mayonnaise then fold through cheese.
- Serve burger with green salad and blue cheese dressing.
