• 4 small fresh tomatoes
• 10 button mushrooms
• Small bowl washed lettuce
• 2 Tbsps lemon/lime juice
• 2 Tbsps virgin olive oil
• ½ cup fresh basil
• ½ tsp salt
• ½ tsp cracked black pepper
- Place lettuce in serving bowl.
- Cut tomatoes and mushrooms into bite sized pieces and toss through with lettuce.
- Mix together oil, lemon juice, salt, pepper and finely chopped basil.
- Pour over salad just before serving.
