Salmon with Spicy Pesto


• 4 x 250 gms salmon steaks
• 2 Tbsps sunflower oil
• 1 lime (juiced)
• Salt to taste
• 4 fresh mild red chillies
• 2 garlic cloves
• 2 Tbsps sunflower seeds
• 1 lime (juiced)
• 5 Tbsps olive oil
• Cracked black pepper



  1. Rub the sunflower oil into the salmon fillets. Place into a shallow dish.
  2. Pour lime juice over salmon and sprinkle with salt.
  3. Marinate in the fridge for approximately 2 hours.
  4. Pesto – In a blender or food processor, place garlic cloves, sunflower seeds, seeded chillies and lime juice. Process until well mixed.
  5. Pour the olive oil gradually over the moving blades until the sauce has thickened and emulsified.
  6. Drain the salmon from its marinade.
  7. Grill the fish steaks for about 5 minutes on either side and serve with the spicy pesto.
