Light Curried Eggs


• 4 eggs
• ½ tsp curry powder
• 2 Tbsps butter
• ½ tsp finely chopped garlic
• ½ tsp finely chopped parsley


  1. Sauté garlic in butter until soft, approximately 8 mins.
  2. Add curry powder. Stir well. Beat eggs lightly.
  3. Stir into garlic mixture and cook over low heat, stirring occasionally until eggs are set.
  4. Sprinkle parsley into egg mixture just before taking from pan.
  5. Can be served in lettuce cups.
