Creamy Zucchini Soup


  • 500 gms zucchini (chopped)
  • 1 large onion (chopped)
  • 1 tsp parsley (chopped)
  • 1 tsp mixed herbs
  • 1 cup chicken stock
  • 1 cup cream
  • Cracked black pepper



  1. Place zucchini and onion in a large saucepan.
  2. Cover vegetables with chicken stock, herbs and seasoning. Cook until tender.
  3. When cool, place mixture in blender and purée.
  4. Return mixture to saucepan. Add cream slowly, continuously stirring.
  5. Heat mixture through. Add parsley and cracked pepper to taste.
  6. Serve immediately
