Ingredients
- 1 large flat mushroom
- 1 medium onion diced
- 1 medium tomato diced
- 4 cherry tomatoes quartered
- 1 Tbsp of your favourite KetoVeg diced (mushroom, capsicum, chillies)
- 1 tsp olive oil
- minced garlic to taste
- dash lemon juice
- sprinkle of grated cheese
- parsley, rocket, chives or shallots to top
- salt and pepper to taste
Method
- Heat olive oil in frying pan
- Cook onion and stir until softened and slightly browned
- Add diced tomatoes, garlic and your KetoVeg to the pan and saute until soft
- Season with salt and pepper
- Stir in lemon juice and remove pan from heat
- Preheat oven to 180 degrees C
- Place mushroom on an oven tray bottom side up with stem removed
- Bake for 6 minutes
- Remove mushroom from oven and add the ingredients from the frying pan, top with cherry tomatoes and cheese
- Bake for another 6 minutes or until centre is hot.
- Sprinkle pizza with your preferred herbs
